Feel Good Friday - SPEED
Leave it to me to make a food post on a day that's usually reserved for comics!
I ate this giant bowl of food at 11am. First meal of the day.
All I did was shred two romaine hearts and saute them in a bit of oil with salt, pepper, garlic, and some raspberry ginger infused vinegar, and then top with parmesan cheese. It's topped with a tin of mackerel that was packed in olive oil (which I drained). If you are trying to introduce small fish, mackerel is WAY less fishy than sardines. They can be a tiny bit dry, but not with lettuce, oil, and vinegar. It forces you to slow down, chew, and take small bites.
I am stuffed, 90 mins. later!
Back to the title of this post, though - SPEED. What's significant about this is the nutrient density, of course, but also the *speed at which it was prepared.* I tore the lettuce by hand, and sauteing two hearts took about 5 mins. Then just dump on toppings. Not every nutrient-dense meal has to have you a slave to the kitchen!
