Here is my favorite quinoa recipe, I said I would post it. I also included my favorite way to eat salmon and it goes great with this quinoa recipe. <3 I can eat a salmon cooked plain and then just squeeze some lemon juice on top though! Lemon Herb Quinoa (Perfect with Honey Glazed Salmon) Ingredients: • 1 cup quinoa (rinsed) • 2 cups low-sodium vegetable or chicken broth • 1 tablespoon avocado oil • 1 garlic clove, minced • Zest of 1 lemon • Juice of 1/2 lemon (more to taste) • 2 tablespoons chopped fresh parsley (or dill for a more coastal flavor) • Salt & pepper to taste • Optional: 1/2 tsp onion powder or a sprinkle of crushed red pepper Instructions: 1. Rinse quinoa well under cold water (this removes bitterness). 2. In a saucepan, heat the oil over medium heat. Add garlic and sauté for 30–60 seconds until fragrant. 3. Add quinoa and broth. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes, or until liquid is absorbed. 4. Remove from heat. Let sit (covered) for 5 minutes, then fluff with a fork. 5. Stir in lemon zest, lemon juice, herbs, salt & pepper. Taste and adjust lemon or herbs as needed! Honey Glazed Salmon Ingredients: • 4 salmon fillets (about 6 oz each, skin-on or skinless) • 1/4 cup raw honey • 2 tablespoons coconut aminos (or low-sodium soy sauce) • 1 tablespoon Dijon mustard • 2 cloves garlic, minced • 1 tablespoon fresh lemon juice • 1 tablespoon avocado oil • Salt & black pepper, to taste • Optional: chili flakes or paprika for a kick Instructions: 1. Preheat oven to 400°F (200°C). Line a baking dish or tray with parchment paper or lightly grease it. 2. Make the glaze: In a small bowl, whisk together honey, coconut aminos, Dijon mustard, garlic, lemon juice, and a pinch of salt & pepper. 3. Prepare the salmon: Place salmon fillets in the dish, skin-side down. Brush or spoon the glaze generously over the top of each fillet. 4. Bake for 12–15 minutes, or until the salmon flakes easily with a fork and has a slightly caramelized top. For extra caramelization, broil for the last 1–2 minutes (watch closely!).
