Monday Meal Plan Is Here!
A good meal plan should do more than tell you what to eat — it should make healthy eating easier to actually maintain. 🌱🇳🇬 This week’s Nigerian-inspired plant-based meal plan is built around bold flavors, familiar cooking traditions, and nourishing whole-food ingredients. A few principles you can take from it: * Build meals around plant proteins like beans, black-eyed peas, lentils, and tofu. * Use spices, peppers, onions, garlic, and herbs to create depth without relying on heavy sauces. * Prep your staples ahead of time — cooked beans, grains, chopped vegetables, and sauces can make weekday meals much easier. * Don’t underestimate plantains. They’re versatile, satisfying, and work beautifully alongside savory stews and rice dishes. * Keep cultural foods on the table. Eating plant-based doesn’t mean giving up the flavors and dishes you grew up with. The goal isn’t to make food restrictive. It’s to make nourishing food flavorful enough that you actually want to eat it.
