Josh has produced his first offspring! I used Sandra's Simple Bread Recipe. I used the yeast as suggested, although it felt like cheating. The results were bread! After mixing the dough, it sat on the counter for 4.5 hours and appeared to have doubled. (Should have taken pictures). It then went in the fridge for almost 8 hours. Then shaped 1 boule and 1 loaf bread, let rest for 80 minutes. Scored with a sharp knife and in the 450° oven for 35 minutes. Temp was slightly higher than 205. Bread cooled on the counter overnight. The bread has a very hard crust and is a bit more chewy than I would prefer, but it had a good taste and got great reviews from husband and friend. I will continue to work on building Josh (starter) stronger and pay attention to the dough during the counter proofing and fridge proofing and shaped proofing. Thanks to all of you (especially Sandra!) for the encouragement and support. Now that the first one is done (and edible), I am not afraid to continue baking sourdough.

I am releasing the idea that I need to be perfect and have all of the answers before I begin. Sandra really helped me with the comment, it is only flour, water and salt. My new motto, Just do it!
Loaf #3 - Feels Like a Win!
Loaf #1 & #2 were more like "brick" and "lump", than "loaf". I finally got my starter, "Frodough", happy and healthy, then found the information I needed on temperature vs time for the rise/proof/ferment. Here are some photos. - Frodough doubling in 6 hours, and sustaining a tripled volume peak for 4+ hours. - Dough after mix, and after some stretch & folds over 6 hours of time on the counter. - Makeshift banneton. I improvised with a new handkerchief in a sieve, dusted with all purpose wheat flour. - No fancy blade - just a sharp knife to score with. - The loaf, fresh from the oven, still too hot to cut, with an internal temperature of 99°C. The texture is great - a few larger bubbles, but not bad. If someone knows if that's a sign of over-proofing (or under), please let me know. I used 80g starter, 364g flour, 272g water, and 9g salt. Next time I'll use 11g salt, for a little more flavour. It wasn't very sour - I think I'll adjust my starter a little to make it a little more zippy, and bulk ferment in the fridge for longer to give the bacteria time to add a little more acid. One final observation... 624g of fresh, yummy bread doesn't last long when there are 6 people in the house who all want more.

Dwayne, this looks incredible! Thanks for the reminder to take pictures all along the process (in case I need feedback). I made my first loaf yesterday and only took pictures of the finished bread. I do keep relatively detailed notes. (My "Josh" journal.) My post with pictures is coming soon.

When I go to Make Room to Try it has a lock and says Private. I do not have access to the video.

Making bread at home matters to me because I want to avoid the chemicals and junk in commercially processed bread. I now have the time to devote to learning and perfecting the art. I enjoy learning new things.

Hi! I am brand new to sour dough. I have an active starter, that I started from scratch. I'm unsure as to whether it is ready to use to bake, but I'm ready to try. I found you on YouTube and the link to the website and community. I will go through these getting started lessons and give it a try. Thanks for the support.
