This Might Be My New Thing! ❤️
Made it through my second CrossFit class! 💪🔥 I’m really starting to like the intensity of these workouts and how much they push me outside of what I’m used to. Last night we did two 12-minute workouts, each broken into 2-minute intervals that we cycled through 6 times. The first was jump rope, kettlebell raises, kettlebell lunges, and a raised plank. Then we went into another 12 minutes of jump rope, slam balls, slam ball squats, and side planks. Definitely challenging, especially trying to keep moving through those timed intervals, but I made it through! I’m only two classes in, but I’m already thinking this might be something I want to keep doing. I love walking away feeling like I challenged myself and accomplished something. Excited to keep learning, getting stronger, and seeing where this takes me! ❤️

Well... I tried Crossfit! 😊
Tried CrossFit for the first time last night! 💪 Last night’s class was cardio mixed with RDLs, which I had never done before. I’m no stranger to rowing and working out, but the overall pace and intensity of CrossFit was definitely something different! It pushed me, but in a good way, and I really enjoyed the challenge. I’ve been wanting to switch things up and find new ways to push myself, and I think this might be exactly what I needed. I survived night one 😂 and I’m actually excited to go back! Can’t wait to see what Thursday’s class brings! 💪🔥

Weight loss isn’t always a straight line. ❤️
My journey has definitely had its ups and downs. I started at 263 lbs, worked my way down to 176, gained some back and went up to 191, and now I’m around 185. And you know what? That’s okay. I’m learning that progress isn’t about never gaining weight back, never getting off track, or doing everything perfectly. It’s about not giving up on yourself when you do. I could look at 185 and be frustrated because I was once 176, or I can look at where I started at 263 and realize just how far I’ve come. There will be good weeks, hard weeks, setbacks, and times when life gets in the way. Just keep going. Get back up, refocus, and keep choosing yourself. The journey doesn’t end because the scale went in the wrong direction for a while. 💪❤️ 263 ➡️ 176 ➡️ 191 ➡️ 185... and still going. Progress over perfection. Always. 🫶

Pinnacle Crockpot Carnitas 🔥
This is loaded with flavor, simple to make, and will be something in your regular rotation for its versatility. Ingredients Pork Shoulder (8.65lbs) Yellow Onion 6 garlic cloves (peeled) Black beans (one can) Two Limes Seasonings (We like the Birria Seasoning) x2 1/4 Cup Beef Broth (optional) Instructions Prep Time (Under 10 mins) 1) Layer black beans on bottom of crockpot 2) Slice onion into rings and lay them flat on top of the layer of black beans 3) Put garlic cloves in next spreading them out evenly 4) Place meat into crockpot with the fat cap facing down 5) Slice limes and wedge them in the pot around the sides 6) Use both packets of seasoning and generously cover the surface of meat 7) Turn crockpot on low and cover with lid 8) Cook on low for 12 hours or until meat easily falls apart from a single fork 9) Remove bone and unwanted fat and serve with your favorite warm tortillas *For extra credit, separate into meal prep containers and grab for the week as needed. With almost 9lbs of meat, serve as tacos, quesadillas, top on salads, or make protein bowls with cilantro lime rice. #PinnacleKitchen #PinnacleRecipes #PinnacleCrockpotCarnitas #EasyMealPrep
