made this one for this weeks 4 day trip! Perfect for high protein low calorie and so freakin good. Sick meal not gonna lie. Enjoy 🍻 Makes: 2 Meals Ingredients Beef * 1.3 lb (590 g) lean 93/7 ground beef * Salt, to taste * Black pepper, to taste High-Protein Queso Sauce * 56 g (2 oz) shredded mild cheddar cheese * 3 tbsp whole milk * ½ tsp garlic powder * ½ tsp onion powder * ½ tsp paprika * ⅛ tsp cayenne pepper (optional—adjust to your preferred spice level) Sweet Potatoes * 2 medium sweet potatoes ⸻ Instructions Step 1 – Microwave the Sweet Potatoes 1. Wash both sweet potatoes and scrub them clean. 2. Pierce each sweet potato 8–10 times with a fork. 3. Place one sweet potato on a microwave-safe plate. 4. Microwave on High for 4 minutes. 5. Flip it over and microwave for another 4 minutes. 6. If it’s still firm in the center, continue microwaving in 1-minute intervals until fork tender. 7. Repeat with the second sweet potato if needed. 8. Slice each sweet potato down the middle and fluff the inside with a fork. ⸻ Step 2 – Cook the Ground Beef 1. Heat a large skillet over medium-high heat. 2. Add the 1.3 lb lean 93/7 ground beef. 3. Season with salt and black pepper. 4. Cook for 8–10 minutes, breaking the meat apart until fully browned. 5. Drain any excess grease if desired. ⸻ Step 3 – Make the High-Protein Queso 1. Reduce the heat to low. 2. Add: * 56 g shredded mild cheddar cheese * 3 tbsp whole milk * ½ tsp garlic powder * ½ tsp onion powder * ½ tsp paprika * ⅛ tsp cayenne pepper (optional) 3. Stir continuously until the cheese is completely melted and forms a smooth, creamy queso sauce. 4. Mix until the ground beef is evenly coated. ⸻ Step 4 – Assemble 1. Place one sweet potato in each meal prep container. 2. Spoon half of the loaded ground beef queso mixture over each sweet potato. (Add veggies to your liking) 3.
