🌮 Cheesy Taco Potato Bowls
Ingredients - 1 lb lean ground beef or turkey - 4–5 medium potatoes, diced - 1 small onion, diced - 1 packet taco seasoning - 1 cup shredded cheese - 1 cup corn - Salsa - Salt, pepper & garlic powder - Small amount of oil Optional toppings: sour cream, Greek yogurt, green onion, jalapeños, black beans, avocado or hot sauce. Directions 1. Dice potatoes into small cubes. Toss with a little oil, salt, pepper and garlic powder. 2. Air fry at 400°F for 18–22 minutes, shaking halfway through, until golden and crispy. 3. While the potatoes cook, brown the ground beef and onion in a frying pan. 4. Drain if necessary, then add taco seasoning and a splash of water. Stir in the corn and cook another 2–3 minutes. 5. Divide crispy potatoes into bowls and top with the taco meat mixture. 6. Add shredded cheese while everything is hot so it melts. 7. Top with salsa and whatever other toppings you like. 🔥 Optional: Put the assembled bowls under the broiler for 2–3 minutes to get the cheese extra bubbly and browned.

🥢 Honey Garlic Chicken Stir-Fry
Ingredients - 1 lb boneless, skinless chicken breast, cut into bite-sized pieces - 2 cups broccoli - 1 red pepper, sliced - 1 cup snap peas - 1 carrot, thinly sliced - 1 tbsp oil - 2 cloves garlic, minced - Cooked rice for serving Stir-Fry Sauce - ¼ cup low-sodium soy sauce - 2 tbsp honey - 1 tbsp rice vinegar - 1 tsp sesame oil - 1 tsp cornstarch - 2 tbsp water - ½ tsp ground ginger Directions 1. Whisk all the sauce ingredients together and set aside. 2. Heat half the oil in a large skillet or wok over medium-high heat. 3. Add the chicken and cook for 5–7 minutes, until browned and cooked through. Remove from the pan. 4. Add the remaining oil and vegetables. Stir-fry for 4–5 minutes so they’re cooked but still have a little crunch. 5. Add the chicken back to the pan. 6. Pour in the sauce and toss everything together. Cook for another 1–2 minutes until the sauce thickens and coats everything. 7. Serve over rice. For a lighter version: Load up on the vegetables and use about ½ cup cooked rice per serving. Meal prep: Makes about 4 servings and reheats really well.

My sister would have been 40 today. She passed away on March 7, 2015, and for whatever reason, I made the “mistake” today of going back and looking through her Facebook. That hit me a lot harder than I expected. I’ve always thought I handled her birthday and the anniversary of her passing pretty well over the years. But today made me wonder if maybe I didn’t handle it as well as I thought. Maybe I just got really good at blocking out some of the feelings and carrying on. Seeing her pictures, reading old posts, seeing her name and little pieces of a life that feels both so long ago and like yesterday brought a lot of it back. Grief is strange like that. You can go months or years feeling like you’re okay, and then something small opens a door you thought you had closed. A picture. A song. A birthday. A memory. And suddenly the sadness is right there again. But I also think that’s part of loving someone and losing them. You don’t necessarily “get over” it. You just learn how to carry it while continuing to live your life. There are going to be hard days. There are going to be moments when sadness wins for a little while. And I think it’s okay to let yourself feel those moments instead of always trying to push them away. Then you keep going. You work. You laugh. You raise your family. You build things. You make memories. You appreciate the people who are still here. And you carry a little piece of the people you’ve lost with you through all of it. Life keeps moving, and somehow we find a way to move with it. Happy 40th birthday, sis. Wish you were here. ❤️
