Makes: 8 wraps Prep: 15 minutes Cook: 15–20 minutes Serving: 2 wraps 🛒 Ingredients For the wraps * 1 lb (454 g) extra-lean ground beef * 8 small flour tortillas * 2 tbsp taco seasoning * 1/3 cup water * 1 cup shredded reduced-fat cheddar cheese * 1 cup finely shredded lettuce * 1 medium tomato, diced * 1/4 cup diced pickles — optional, but surprisingly good! High-Protein Taco Sauce * 3/4 cup plain Greek yogurt * 2 tbsp salsa * 1 tbsp taco sauce * 1 tsp lime juice * 1/2 tsp garlic powder * Pinch of salt 👨🍳 Instructions 1. Make the sauce. Mix Greek yogurt, salsa, taco sauce, lime juice, garlic powder and salt. Refrigerate while you prepare everything else. 2. Prepare the beef. Divide the raw ground beef into 8 equal portions. Lay a tortilla flat and spread one portion of beef over one entire side of the tortilla in a very thin, even layer, pressing it right to the edges. Sprinkle the beef lightly with taco seasoning. Repeat with all 8 tortillas. 3. Cook them beef-side DOWN. Heat a large non-stick skillet over medium-high heat and lightly coat with cooking spray. Place one tortilla beef-side down in the hot skillet. Press it firmly with a spatula for the first 10–15 seconds. Cook for approximately 2–3 minutes, until the beef is cooked through. Because ground beef needs to reach 160°F/71°C, check the thickest area with a food thermometer rather than relying only on colour. 4. Flip & crisp. Flip so the tortilla side is now touching the pan. Sprinkle about 2 tablespoons of cheese over the cooked beef. Cook another 1–2 minutes until the tortilla is golden and crispy and the cheese has melted. Transfer to a plate and repeat. 5.
